2. Tortilla de Huevo Taco
Ingredients:
- 6 eggs
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1/2 cup grated cheese (cheddar, Monterey Jack, or pepper Jack)
- 12 corn tortillas
- Salsa, for serving
- Guacamole, for serving
Instructions:
- Whisk together the eggs, salt, and pepper in a bowl.
- Heat a nonstick skillet over medium heat. Pour in a thin layer of egg mixture and cook for 1-2 minutes, or until cooked through.
